Paul-Roosen-Str. 31, Hamburg
2011 opened under the name Tarterie St.Pauli, the small bistro developed with their alsace cuisine fast to one of the hotspots of the harbour city. Over the years, chef and owner Fabio Haebel refines his cuisine steady and used his rooms in the Paul-Roosen-Str. 31 next to the the old cinema where the beatles slept as kind of a test laboratory. Since 2014, Haebel serves his casual fine dining Cuisine and still develops steady on. 2016, he added the claim "nordic french" and in this case, it was time to change the name of the restaurant from tarterie to hæbel. Because quiche and Tarte flambe, do not served for a long time now.
The ambience is nice and cozy, and the open connection to the kitchen is well and “naturally” solved. The concept of the carte blanche is known and you know what you are getting into. Some courses are really nice, others too little harmonious (oyster: interesting contour, less typical "oyster taste", but no salt and overall not balanced) or even boring (sea buckthorn ice cream: tastes like frozen sea buckthorn syrup from the health food store) and thus well below our own standards lagging behind. Wine accompaniment ok, unfortunately nothing surprising. Evaluation at a high level according to price and requirements.
Price high performance got out of hand. Mini servings are claimed with the wrong cooking theory.
I was there once. Very expensive, and in high demand i.e. you should reserve in advance. But it s worth it: Very original and excellent food. The wines (Weinbegleitung) were also very well chosen. The only slightly negative aspect is that the very small location did not have optimal acoustics. Still, the refined and original cuisine is absolutely worth experiencing. I would eat here more often if my revenue were much higher 😅
A nice evening
The kitchen is motivated and well crafted, but does not offer any real culinary highlights that would be remembered for longer. The noise level is clearly too high for a relaxing evening, this has more of a bistro character. This means that queries from the service or guests are often necessary, which is exhausting. Gears not selectable, but allergies and wishes are well catered for. The nicely arranged and served over three hours small portions still leave some space in the stomach. For 2 people with wine approx. 250 euros. Doesn't quite fit yet.
Exqusite, outstanding. The French way of eating and enjoying is offered and lived here. Seldom such beautiful visits as here. Team also appreciated.

Before I give a negative review, first of all the positive: the food was good to very good, the service attentive and the wine accompaniment largely appropriate. In the end, however, it became a back table because the second cast was already at the door. This went so far that we didn't even bother when we stood in the way and waited for our cloakroom. The jackets and coats were only brought to us when we contacted a service person. Too bad for the final impression.
Absolute class. Very clear recommendation if you want to experience a very nice evening on a special occasion. The small restaurant with open kitchen has a very pleasant atmosphere in which you feel right at home. The service was very polite and courteous and the wine selection and advice was great. The best part was the food. Really excellent. What is possible with actually normal ingredients - combination technology and taste - is simply always amazing.

Absolute recommendation! The concept is absolutely convincing, the food itself is absolutely high quality and a total pleasure! The location is small but cozy!
We spent a nice evening in the lever. The concept is exciting and the dishes have tasted us. The wine consultation is great. Unfortunately the Haebel did not convince us. The price for the menu seems to have increased. The water is inclusive, we found good - nevertheless, you get fast for two over 300 € on an evening. For this we would wish for more creativity in the courts, an interaction of textures, for example, was missing. The gears were very similar in structure. The portions were adequate, but one of the middle courses could be a bit bigger, we were both a little bit hungry afterwards. The Haebel is very intimate of the premises; The tables are very close to each other and the open kitchen actually invites the interaction between the cooking team and guests. Unfortunately there was no interaction between the cooking team and the guests on our evening. This is slightly different for other restaurants in the price range. Due to the small room, it gets loud when it is full.
The food and the service in the Haebel were good, especially to emphasize the wines in the wine accompaniment. The only criticism is the price. Compared to other menu restaurants you get more for a similar price.

Both the restaurant and the wine bar next door are really excellent. Now and then a little chaotic, if you come to the second occupancy. Waiting for the guests to wait 20 minutes to order a first drink is certainly better. But the courses are really innovative and taste great. The boss is often on-site himself and contributes to an extraordinary evening.
The Haebel is an enrichment for the culinary art of Hamburg. The La Cave as an appetizer bar and entry into the world of natural wines is a highlight with excellent service. The motto of La Cave continues in the restaurant based on herauragenden wines. A Roche Audrand and Le Grand Vlanc stay with me for a long time. Thanks a lot for this! The menu is as promised Nordic, French. A beef tartar with oyster foam will be remembered as well as a black cod. However, a pulp easily bites at the acid of the minor components and the wine accompaniment. The wine accompaniment is pleasantly generous. The ambiance is typical of the neighborhood; Too loud for my taste, slightly dirty and too tight. The shortcomings are intercepted by a very attentive and nice service. Given the portion size, the price level is above the level of the evening, which unfortunately only 4/5 stars remain. We will definitely be back, it was a very nice evening. Thank you!

Good food though the beef was overcooked, which was disappointing given the high priced menu.
Unique variety of food. The menu is above average cost but the food was delicious.
We had a wonderful evening in the hæbel. The whole staff is more than friendly and accommodating and where do I start eating. Also for vegetarians there was always an equal alternative and every course was excellent.

A very small but nice restaurant. Accordingly tight and loud it is. We had the fortunate misfortune of a double reservation, so we got a table next door in the wine bar, where it was a little more relaxed. The food is very puristic and well balanced. Nevertheless, one wishes for some dishes an aromatic highlight, such as the Irish oyster or lamb fillet. Positive: the table water is included. Point of criticism, no bread with butter on the table and quite small portions for the price level. All in all, a nice concept at slightly inflated prices for the serving portion size. If you want a quiet and comfortable evening could be disappointed here.
Clear recommendation if you want something special! Excellent cuisine with a certain something, always present service without being intrusive, not cheap but the special has just sometimes its price!

This restaurant is amazing, the staff was amazing, and the food was even better. I wish I could eat this every day! This restaurant was was just as good as the best restaurants I've been to in New York or Paris. Will come back next time I'm in Hamburg.

A few days ago we had dinner there for two .. we had a voucher from beef best cuts in town .. a very small restaurant in saint pauli .. very courteous reception .. we were the only guests at the typical parents eatery at 6.00 pm clock .. it was an all-round delicious and relaxed evening .. with perfect service and a constant view of the kitchen .. we would love to come again ..
Highly recommended for anyone looking for something for a special occasion. The open kitchen is wonderful, the waiters are nice and the concept works. The wines (which you can also buy next door) were delicious. We even took some next door home :) Vegetarians or allergies are not a problem here. Just say at the beginning. I give 4 stars, because I hoped for a little more for the price and was still a little hungry afterwards. Dessert was my favorite! It would be great if you could learn more about the dishes and chefs ... thanks for the nice evening!
One of my favourite neo-bistro style restaurants that I've been to, regardless of country. They make good use of German, seasonal ingredients with a nice use of sourness to add contrast. The wine selection is thoughtful, with more emphasis on German and Austrian wines - ie, efforts from younger winemakers. The wines have a similar philosophy to the food: not overwhelmed by seasoning (oak). As of March 2018, they only offer the 5-course tasting menu, but it is well worth your time and money.
Great creativity and very down to earth. Nice wine selection, open kitchen space and prefect for a complex food experience without the usual Chi-Chi. Loved it.

Very stylish fine dining restaurant. The food is absolutely highly quality. There is always one 5 course menu with a vegetarian alternative and wine pairings. One of our favorites in Hamburg!
